Coffee Roasting Process
Coffee Roasting is a chemical process by which green coffee beans are heated to high temperatures and transformed into drinkable roasted coffee beans. Our Probat UG 22
coffee roaster typically operates at temperatures between 240 - 275°C to produce a selection of different roasts. The beans are roasted for a period of time ranging from 3 to 30 minutes and the same bean can produce a different taste depending on how long it is roasted. Coffee beans of light, medium and dark are obtained by roasting the beans at different temperatures until the desired point is reached.
The green beans are placed into a hopper until the coffee roaster machine reaches the proper temperature. The beans then flow into the roasting chamber and begin their transformation. The first step in the roasting process is when the green beans are slowly dried to become a yellow colour and the beans begin to smells like toast. As the beans absorb heat, the colour shifts from yellow and then to increasingly darker shades of brown.
The second step of coffee roasting is what experienced
coffee roasters refer to as the ‘first crack’ when the coffee bean releases a popping sound similar to popcorn. This stage marks the beginning of light roasts. The roast will continue to darken until it reaches a ‘second crack’. This is the dividing point between medium and dark roasts. During the later stages of roasting, oils appear on the surface of the bean. The roast will continue to darken until it is removed from the heat source.
When the coffee beans have reached the correct roasted point, they are discharged from the
coffee roaster into a perforated cooling tray. Ambient air is pulled over the beans by a cooling fan while a rotating stirring arm circulates constantly to cool them evenly. The beans reach extremely high temperatures in the
coffee roaster, and cool to room temperature in just a few minutes.
