From the Djimmah region, which is approx. 360-400kms west of Addis Ababa, and supplies most of Ethiopia’s unwashed (sundried) coffee – however this Yechi is a fully washed, so fairly unusual in that respect. The (probable, with Ethiopia you never know) sub region is called Illulabor, and is more like 600kms from Addis. Coffee will have been milled to remove cherry skin, fermented for 12-24 hours in water to remove sugars, then washed thoroughly. It will be shipped as parchment to the ECX and then the parchment removed prior to export. Harvest would have been in Nov2010-Jan2011, although didn’t reach the UK until Apr/May 2011.
