Earthy wood spice and fruity aroma. Full bodied with a slightly dry finish. Some grapefruit and marzipan sweetness develops in the cup as it cools.

The Blue Batak coffee comes from the Kabupaten province in Humban Hadundutan, in North Sumatra. This coffee is grown and processed by the communities of Batak Toba, in a flat area between 1550-1650m above sea level. Soils are mainly acidic, with medium fertility rich in organic matter. Most farmers in the area apply compost once or twice a year. Compost is produced in their own system with manure of buffalo or pig mix with coffee pulp and weeds. Most coffee trees are Catimors (70%) associated with Typicas (25%) and Bourbon (5%).
Coffee beans are handpicked when ripe and processed by manual pulpers. The wet parchment is then left in plastic bags for 10 to 12 hours for the fermentation process. Then the mucilage and husk is removed by hand while washing in clean water. The coffee is sun dried and cleaned before selling to the local market.
