SCAE Professional Barista Course at Bailies

After the excitement of World of Coffee in Dublin, there was little rest for our head barista trainer Julia as she lead Northern Ireland’s first ever SCAE Professional Barista Skills course.  Taking place over 3 intensive days in our Training Academy, the attendees were put through their paces.  Covering everything from the science of espresso extraction, water chemistry and tasting various organic acids to learning about what exactly is in our milk and how to calculate the number of coffees you need to sell in your café to break even.  We can very happily announce that we had a 100% pass rate!  A massive congratulations to Caroline Irwin, Stuart Atkinson, Natalia Spasowska & our very own Jonathan Parks on becoming...

Thank You Dublin World of Coffee

The Bailies team are just back from a wonderful time in Dublin where the World of Coffee show has been taking place. We have now exhibited at 4 trade shows this year, this one being our first ever global event. The general consensus was that we had the most fun of any trade show we've taken part in thus far, the people, camaraderie, atmosphere and coffees on display were nothing short of fantastic. We showcased some top notch coffee and served up espresso, filter, cold brew, nitro brew and even had an imperial porter beer made with some of our roasted coffee which was a big hit. Food & Bev 2016 - Brewers Cup

Trade shows are a part of life here at Bailies Coffee - its great for us to spread the word, and more importantly spread the taste of our coffees to people who may not have tried them. We recently attended Food & Bev in Dublin, which was also the host of the 2016 Brewers Cup and Barista Championship. This year we had 2 of our own staff taking part in the Brewers section - Jonathan Parks and Stephen Houston. They were getting in some pre-competition practice on our stand in the image below. COLOMBIAN DECAF ARRIVES AT BAILIES

The arrival of new coffee beans is creating a lot of excitement in the Bailies roastery. The new coffee is from Colombia and more importantly – it’s a decaf. It comes from a group of farmers in Planadas, Tolima. It’s a small south Colombian region that is locked by West and Central Andes, almost inaccessible due to mountain ranges and unsafe areas in south Huila and partially still controlled by paramilitaries. What makes this coffee growing region unique is that it has some extraordinary conditions for growing coffee. It’s grown in an altitude of around 1600 masl. in a loam and clay soil rich in volcanic ashes. The coffee varietals being grown here are all traditional – Typica, Caturra, Castillo...
