We've just received this fresh crop washed Colombian from our long-standing partners Comepcafe! An exceptional coffee tasting of bright and fruity flavours. It's also the lot we roasted for the NI Aeropress Comp! Tasting notes of Raspberry Jam, Red Grape & Vanilla.

This lot is from our long-standing, single-origin partner Comepcafe cooperative.

This is now the second year around we are receiving microlots. It's a project we're really excited about here at Bailies, we've been working on things for the past 4 years.

Normally the best lots would go into our Colombia Comepcafe single origin. However, working closely alongside the Co-op we have been encouraging quality through higher premiums, the best lots are separated and then sent to us here at Bailies. Resulting in a higher quality end cup and a mutually beneficial relationship for us both.

PROCESS

The coffee is hand-picked then sorted by lot, after this it is pulped and dry fermented for 24 hours.

After the drying period the coffee is washed in channels and is taken to a parabolic drying system where the beans are dried slowly to allow for full development of the flavours. The beans are measured for moisture content and when they reach appropriate levels the coffee is immediately packed into jute bags.
