Cerro Dragon is located in the renowned growing region of Tarrazú in Costa Rica. Appropriately named after the nearby mountain (Dragon Mountain) which from a distance resembles the shape of a dragon.
The farm is owned by Ricardo Fernandez, a meticulous 3rd generation farmer with a wealth of experience under his belt. Over the years, Ricardo has managed to really develop his farm.
Ricardo wanted to see his quality through processing as he had done with growing. In the early stages he couldn’t afford to process cherries himself, so he would sell onward to nearby wet mills that processed and sold the coffees at a profit.
However, after years of saving, in 2012 Ricardo invested and built his very own micro mill! He now has a small, yet highly professional operation where he oversees the entire coffee journey.
This is a great example of one of Ricardo's naturally processed lots, although the farm also produces red/white honey and washed coffees.
The ripest cherries are individually picked at the farm and collected into sacks. At the end of each day, they're delivered by truck to Ricardo's micro mill where they are washed and all imperfections removed.
The cherries are then placed onto raised beds where they have been slowly dried in the sun. Once reaching an optimal 11.5% moisture content, the dried cherries are stored and delivered to dry mill in San Jose to prepare for export.
