It's a first for us and Costa Rica. We couldn't be more excited about this one, the first of two incredible lots Alejo has prepared. Find notes of Dried Apple, Mixed Berry & Fig in this natural Caturra lot.
A few weeks ago, we had Alejo from Volcan Azul here in Belfast to tell us the story of his farm and of Costa Rican coffee. The conservation efforts, the focus on worker welfare and the sustainability in composting the coffee fruit mucilage were just some of the things that really impressed us.
Sourced directly from our partners at Volcan Azul. The farm is carefully and responsibly managed by Alejo Castro, the fifth 'Alejo' in the Castro family since it's establishment in the 1840's.
Years of experience passed on from his forefathers have helped shape the farm and Alejo continues to take things further. Currently growing an impressive 40+ varieties, giving the farm huge diversity in their offering.

Before harvesting, the cherries are constantly measured for ripeness using refractometers. The point they reach peak sweetness the cherries are manually picked and brought to the on-farm wet mill.
The cherries are then washed, imperfections removed and transported onto raised beds, where they are turned regularly to allow for slow and even drying.
Once the cherries reach the ideal moisture content they’re sent to the on-farm dry mill where the husks are removed and coffee is prepared for export.
