Finca Nueva Armenia is an organic, quality led farm hidden in the Cuchumatanes mountain range. Find tasting notes of spicy yet sweet Tangerine, Chestnut & Clove.
The farm has been apart of the Recinos family for 4 generations, currently managed by twins Jorge & Javier.
They focus on producing the highest scoring coffees utilising the most biodiverse and environmentally friendly methods.
Due to their hard work and meticulous selection process they have managed to become one of the most recognised farms in Guatemala. This is only one of three nanolots we purchased this year!
This lot was grown and picked from the highest part of the farm. It is composed solely of Typica variety. A slow ripening process and a combination of late harvest / slow fermentation helped produce a distinctive end cup.
The cherries for this particular lot were picked slightly after their maturation peak to help give them more pronounced flavour and greater sweetness.
After de-pulping and separation, the beans were dry-fermented for approximately 32 hours and washed in a steep 200m long washing channel. Cleaned of their parchment the beans are then dried over 11 days on raised beds.
