Roasted for filter: Best enjoyed as a pour over, without milk, to allow the subtleties of the light roast to emerge.
This coffee is traceable to the Melkamu Zergawu Tene washing station. Many smallholder farmers have contributed to this beautiful lot.
PROCESS
Once the cherries are ripe, farmers collect them and bring them to their local washing station. At this point the coffee is weighed, quality assessed and the farmer is paid accordingly. The washing station manager then separates the cherries by quality and the coffee is screened for any imperfections.
Afterwards, the coffee is sent to the disk-pulper, once pulped the beans are left to ferment overnight. In the morning the coffee is washed in channels and cleaned with fresh running water. Clean parchment beans are then spread out onto raised drying beds where they are dried over 8-15 days. Some of the best lots have been secured by our exporter Heleanna and carefully processed in her dry mill in Addis before she prepares them for exportation for us.
