You may remember our Guji last year, this year we've taken it a step further introducing coffee from Shakiso, a smaller town located in Eastern Guji, traceable to the Gawale Dulacha Dhabo mill. Sweet, Rich Honey aromas followed by flavour notes of Peach Iced Tea, Orange Marmalade & Vanilla
As a region, Guji is largely known for some of the best quality coffees in Ethiopia. Shakiso, is achieving outstanding results even when compared to some of the more famous neighbouring regions.
Once the cherries are ripe, farmers collect them and bring them to their local washing station. The coffee is weighed, quality assessed and the farmer is paid immediately.
The washing station manager then separates the cherries by quality, screening for any imperfections. Afterwards, the coffee is pulped on disk pulpers and left to ferment overnight.
In the morning the coffee is washed in channels and cleaned with fresh running water. The clean parchment beans are then spread out onto raised drying beds where they are dried over the course of 8-15 days.
Once dried, the beans are packaged and loaded onto trucks to be delivered to Addis Ababa. From here our exporter Heleanna mills the coffee, carefully removes all imperfections and prepares for export to Belfast.
