Washed Maragogype from Colombia, taste maple syrup and vanilla sweetness with a hint of zesty orange and a spicy aroma. 

Manantiales del Frontino is one of the larger farms in Colombia that has decided to invest in growing more exotic varieties than the Castillo promoted by the Colombian Coffee Growers Federation. There are 17 different varieties spread around the farm, but currently 10 which are producing enough fruit to be separated and processed into final single variety lots. Every variety has a designated patch of land that best suits its nutritional requirements, with great care and attention being paid to farming practices. The locations environment and diversity offers optimum conditions for growing high specialty coffee. We’ve selected 2 rare varieties from the most recent main harvest that we hope our customers will really enjoy – this one being a Maragogype.

The coffee cherries are picked over several days while at their optimum ripeness and brought to the on-farm wet mill. The skin is removed and the coffee is fermented in tanks for 18 to 22 hours. The coffee is then washed in channels and transported onto drying patios with a parabolic tent where gets dried over the course of 14 days. The coffees are then shipped to Manizales where the parchment gets removed in a unique cold mill to maintain the high quality of the coffee.
