This microlot was produced by our long-standing, single origin partner Comepcafe Cooperative. Taste notes of Sweet Pink Grapefruit, Blackberry & Caramel

We thought it would be a great idea to try something new this year round and we're extremely excited to share this project with you.

We've been working with our partners over at Comepcafe Cooperative for the past 4 years now, it's been a staple in our Single Origin and Blend offerings and is now making an appearance as a Microlot. Comepcafe is a quality focused Cooperative with smallholder farmers contributing to the overall quality of coffee produced each year at harvest.

This year we have kindly asked to have the top microlots separated to help showcase the quality of the Co-op. From this, we now have a standout microlot on the table from what would normally be combined with all other lots

After tasting, a producer group from the small town of Pueblo Nuevo has came out on top with this incredibly sweet and refreshing microlot, a rarity for us and a showcase to the ongoing partnership we continue to foster with the Comepcafe.

PROCESS

Every farmer is provided with a small yet professional washing station on his land. As the coffee cherries ripen they collect them and bring them to the ‘benefício’ the 'washing station'.

They are pulped on small drum pulpers and fermented for 12-18 hours. Afterwards, the beans are washed in channels and placed into parabolic tents where moisture and temperature are controlled for the best drying conditions.

The process usually takes around 10 days until the clean parchment beans reach an optimal 12% moisture content.
