Hand-picked cherries are sorted before being dried on raised beds for 28 days. The drying beds used at Inmaculada are their own design of a carousel machine, meaning they can control; humidity, sunlight and shade over this course of drying time. Once dried, cherries are sorted again before milling, dry milled on sight and rested before exportation.
