Many smallholder farmers have contributed to this beautiful lot, it is a selection of the some of the highest quality lots Yirgacheffe has produced this year.
Despite its reputation built upon quality coffee, Yirgacheffe is also one of the most densely populated areas in East Africa and concerns are that pollution from roads and villages may create difficulties in growing the same quality of coffees this region has developed its reputation upon.
Once the cherries are ripe, farmers collect them and bring them to their local washing station. At this point the coffee is weighed, quality assessed and the farmer is paid accordingly. The washing station manager then separates the cherries by quality and the coffee is screened for any imperfections.
Afterwards, the coffee is sent to the disk-pulper, once pulped the beans are left to ferment overnight. In the morning the coffee is washed in channels and cleaned with fresh running water. Clean parchment beans are then spread out onto raised drying beds where they are dried over 8-15 days. Once the beans are dried, they are loaded onto trucks and auctioned at Ethiopian Commodity Exchange. Some of the best lots have been secured by our exporter Heleanna and carefully processed in her dry mill in Addis before she prepares them for exportation for us.
