A farm with strong family ties. The Mirón family have successfully run Concepcion Pixcayá for over 4 generations since 1926 with a strong focus on not only quality, but forest preservation. Taste notes of Orange, Tamarind & Pecan in the end cup.
The farm is currently managed by Manuel with help of his mother Maria. The family are extremely focused on producing high-quality specialty coffee without the use of chemical fertilisers and pesticides.
They are also committed to forest preservation, with areas on the farm dedicated to this. Their success in the finals of Cup of Excellence is a testament to their focus and efforts.
Ripe cherries are picked and brought to the wet mill where they are pulped and fermented. After fermentation, the mucilage is mechanically removed and the beans are further classified by density in washing channels.
Before being transported, the beans are evenly spread out and slowly dried in the sun on drying patios. The washed beans are turned every couple of hours and after around 6-10 days they reach the optimal moisture levels.
