Isaura Martinez is a Honduran Coffee Farmer who has over the years learned how to grow coffee from her husband and then for herself after inheriting familial farms. When first beginning in coffee production, all Isaura's coffees were processed as washed, as is the norm in Honduras.
After visiting Honduras and Isaura in 2016, she was convinced that her farm had the potential to produce some of the highest quality coffee in Honduras, and was inspired to produce more specialty coffees.
With the help of Pacayal, the farming group/cooperative located in nearby Chinacla town, she began experimenting with honey processed coffees and then naturals. Isaura really liked the natural process, because it didn't waste water and to her, the quality was good if not better than the washed coffees.
When we visited Isaura in 2022, she shared that nowadays over 60% of all of her coffees are processed as naturals. Whilst a majority of these naturals are sold to us at Bailies, Isaura is now getting interest in her naturals from many other roasters, which is incredibly exciting and uplifting for her and her journey in her processing story.
