This Honey processed lot has family at the heart, exhibiting a remarkably sweet flavour profile with notes of syrupy Molasses, Red Apple and Clove
Finca Johelyta is located near the Honduran border with El Salvador, a tropical micro-climate that is very favourable for slow maturation of the cherries. The owner, Mirna, started coffee farming as a way to provide for her family and named the farm after her first daughter Johely. With meticulous work she has managed to improve quality and therefore increase her income which Mirna has proudly used to fund a scholarship for her children at a local bilingual school.
The cherries have been hand-picked and carefully brought to the wet mill. They were quickly rinsed and then the cherry skin removed. The beans in parchment with sticky mucilage still attached are then spread out in a thin layer onto concrete patios and dried over the course of 10 days.
