La Concepción is a farm located close to Márcala, the most famous coffee growing region in Honduras. Its owner always dreamt of having a farm, but he couldn’t afford it. So once Manuel finished school in Honduras he moved to the US to work there. After 6 years he came back to Márcala and with the money he saved he bought the land and started La Concepción. His vision, to produce excellent coffee through hard work and an innovative approach to processing. This particular lot was produced solely with Catuai trees and processed with the honey technique.
The cherries are picked and delivered to the on-farm washing station. After sorting and separation of floaters (low-density beans will float to the top of the tank separating high and low quality). The beans are then pulped and transported with all the mucilage still attached to the beans to drying patios. At this point they are turned every couple of hours over a period of 12 days as they reach the required moisture levels.
