Las Flores is a small farm located near Chinacla. It is managed by Natalie Pineda, who over the last two decades has been committed to raising the standards of specialty coffee.
Her son Edgar and daughter Karen are supporting this ethos further through their own company that focuses on supporting farmers, processing and exporting coffees.
Collectively they are improving the quality of the coffee and it’s processing in Honduras. Last year, we highlighted the potential of this farm and this year it has rightfully placed 4th in the Honduran CoE.
After picking the cherries have been taken to the wet mill in Chinacla where they are weighed, screened and manually selected. The ripest cherries are then pulped on a rotary pulper and placed on raised drying beds whilst still covered in sticky mucilage. Drying conditions have been regulated to maintain slow, gentle drying.
