Las Flores is back into the roastery, this time round it's naturally processed, bringing a punch in flavour to the table. The farm achieved an incredible 4th place in the Honduran CoE 2017 and continues to push on. Find sweet notes of Cherry Cola, Dried Plum & Red Grape in this Bailies Direct lot.
Las Flores is a small farm located near Chinacla. It is managed by Natalie Pineda, who over the last two decades has been committed to raising the standards of specialty coffee.
Her son Edgar and daughter Karen are supporting this ethos further through their own company that focuses on supporting farmers, processing and exporting coffees.
Collectively they are improving the quality of the coffee and it’s processing in Honduras. Last year, we highlighted the potential of this farm and this year it has rightfully placed 4th in the Honduran CoE.
After picking the cherries, they are brought to the local wet mill in Chinacla where they are weighed, screened and manually selected. The ripest cherries are placed on raised beds where they are slowly dried for over the course of a 3 week period. They aim to reach 11.5% moisture content before being placed into storage.
