The Ndimaini mill provides a home to many of the local smallholder farmers coffee cherries. Months before harvest, the mill provides advances to the farmers which helps support school fees for their children as well as resources for harvesting. Growing secondary crops like maize, bananas and macadamias are promoted in order to stabilize farmers’ income, this is highly important especially in years like this where the farmers have lost more than 30% of their coffee crop due to insufficient rain.
Farmers bring the cherries they have picked from their garden to the Ndimaini wet mill. Before they can process them, the cherries need to be manually separated. The best quality cherries are de-pulped, fermented and washed in channels before further separation takes place again by density – after this process, the washed cherries are laid out on drying tables and are sun-dried over the course of 12 days.
