Mexico Finca Fatima Microlot

We are delighted to be welcoming this microlot from 3rd generation producers Ernesto and Givette at Finca Fatima to the roastery. With taste notes of Green Apple, Honey & Cocoa, this is one not to miss.
In Mesophilic mountain forest, Finca Fatima sits at 1250masl in Coatepec Veracruz, where the first arabica varieties of coffee were planted in Mexico.
Finca Fatima was acquired in the 70s, and in 2018 by 3rd generations producers Givette and Ernesto who decided to enter into the specialty coffee market. Within its 16 hectares, the coffee is shaded with more than 15 varieties of fruit trees that provide shelter and food to animals and birds. The farm also contains two water springs, endemic flowers and ancient tree ferns native to Mesophilic forest.
The coffee itself takes around 8 months to reach perfect maturity once flowering. Once picked the cherries are sorted manually before transported and processed at the coffee mill. Throughout the entire chain from production to marketing, Finca Fatima and the APG coffee mill have a positive impact on ore than 85 families dedicated to the coffee of this region of Coatepec.
