SCA FOUNDATION SENSORY SKILLS

This entry-level course is perfect for anyone who loves coffee, or who is thinking about becoming a barista.  Developed by Specialty Coffee Association (SCA) as part of their Coffee Skills Program and delivered by our highly qualified Authorised SCA Trainers (ASTs), this training course focuses on the key skills needed to develop participants’ skills as a professional barista by mastering the basics of becoming a sensory expert.

This course can be completed with or without certification.

Over the course of this one-day session, you will learn about the physiology, neurology, and psychology of how we perceive taste, aroma, and mouthfeel. With a series of practical exercises designed to help reinforce the theory, participants will learn how our senses interact with each other to create a better understanding of how we experience and evaluate the things that we consume!

 

The content covered will include:

  • Sensory aspects of non-specialty and specialty coffee
  • Five basic tastes and tongue mapping
  • Key attributes and definitions for acidity, bitterness & body in coffee
  • Learn how to use the SCA Flavour Wheel
  • Aroma training
  • How to create and set an SCA cupping table

 

Skill Level – Entry Level, no previous coffee experience required.

Course Length: 7 hrs

Timing: 10:00 AM – 17:00 PM

Exam:

Practical exam: Completed on the day of the course, this is a causal assessment of how well you are using the skills taught during the course.

Theory exam:  A short online multiple-choice exam to be completed at home in your own time. 25 questions. 27 minutes. 60% pass mark
