Our first Bolivian of the year, this Java from Finca Waliki is a perfect blend of delicate fruitiness and florality.

High in Bolivia’s Caranavi region, just outside La Paz, Finca Waliki is a young but exceptional farm from the renowned Los Rodriguez family. Planted in 2016, the farm takes its name from the Aymara greeting “Waliki” — meaning “everything ok?” — a reflection of the warm, community-led culture that defines coffee growing in this region.

Spread across 7.9 hectares at altitudes reaching up to 1,620 masl, Waliki is uniquely structured across three distinct levels. Each tier brings its own microclimate, influencing how the cherries mature and shaping complex, layered flavour profiles in the cup.

Java Varietal

Finca Waliki is planted with a selection of high-quality varieties, including Orange Bourbon, Geisha, and Java — each chosen for its flavour potential and adaptability.

Among these, Java stands out — not only for its cup quality, but for its story.

Originally taken from Ethiopia to the island of Java in the 19th century, the variety has since travelled across continents. Now understood to come from Ethiopian landrace genetics, it gained recognition in Cameroon for its resilience, vigour, and natural tolerance to coffee berry disease, performing particularly well for smallholder farmers with limited inputs.

Introduced to Central America by CIRAD (Central America by the Centre de Coopération Internationale en Recherche Agronomique pour le Développement) — Java is now increasingly valued for its performance at higher altitudes — producing clean, structured, and elegant cups, often compared to Geisha, but with greater reliability and resilience in the field.

Process

This lot has undergone washed processing, carried out after the cherries are carefully hand-picked at peak ripeness. The cherries are then pulped and fermented in water (tank fermentation) before being thoroughly washed to remove the mucilage and slowly dried to stabilise flavour.

Processing is carried out at AgriCafe’s centralised mills, allowing for tight control, consistency, and responsible water use. The result is a cup that is clean, structured and  bright with a refined acidity.
