Introducing our February Microlot release, Brazil Arara Aerobic Natural Microlot from Capim Branco. Capim Branco was the first farm owned by the Andrade Brothers of Sao Silvestre - one of our Direct Trade partners in Brazil, with a relationship spanning almost a decade.

Capim Branco was the first farm owned by the Andrade Brothers of Sao Silvestre - one of our Direct Trade partners in Brazil, with a relationship spanning almost a decade. 
 
This is the second time we’ve been able to purchase a Microlot of the Arara varietal from the Andrade Brothers in Brazil. 
 
Over the years, the Andrade Brothers and their farms have earned their reputation in Brazil by always producing coffees of high quality, but also through experimentation. 
 
The ‘Arara’ varietal was accidentally created when crossing cultivars, resulting in a varietal that once released, became a popular and desirable plant for producers to work with due to it’s resilience to disease.

Since it’s accidental inception, Arara has been growing in demand and scoring 86 and above in competition, lending itself to becoming not only practical, but an exciting and satisfying varietal in Brazil.

Process

After the ripe cherries have been separated, they are put inside open air tanks to ferment in ambient temperature, around 23°C. After 48 hours, the coffee mass is removed from the tanks after reaching temperatures of 35°C. 

After fermentation the coffee cherries were transported to raised beds to slowly dry for 21 days.
