What makes coffee, specialty coffee?

Specialty coffee is coffee that scores over 80 out of 100 on the Specialty Coffee Association (SCA) scale, as evaluated by certified Q Graders. It is grown in ideal climates and carefully harvested and processed to highlight unique and high-quality flavour characteristics. Specialty coffee often prioritises sustainable and regenerative farming practices, focusing on the long-term health of the land and the future of coffee production.

How is our specialty coffee different from regular coffee?

Our specialty coffee is different from regular coffee because we work almost entirely through direct trade, which means we know exactly where our coffee comes from and personally visit the farms. This allows us to understand and support the farming conditions and practices behind each coffee. By building long-term relationships with producers, we ensure more consistent quality over time and pay fair, Bailies-specific prices that reflect the true value of the coffee, rather than relying on generic fair-trade models.

Where does our specialty coffee come from?

Our specialty coffee is sourced from carefully selected producers across some of the world’s most respected coffee-growing countries. We work with farms and cooperatives in Colombia, Ethiopia, Guatemala, Brazil, Costa Rica, Bolivia, and El Salvador, choosing coffees for their quality, character, and traceability. All beans are then roasted by us in Belfast, ensuring freshness and flavour from seed to cup.

What ways can you brew specialty coffee?

Specialty coffee can be brewed in a variety of ways to suit your taste and routine. Popular methods include pour-over brewing for a clean and balanced cup, French press for a rich and full-bodied brew, AeroPress for a smooth, versatile coffee, and espresso for a more concentrated extraction that forms the base of milk-based drinks. Each method allows you to experience different flavours and characteristics from the same coffee.

What is the difference between roasts in specialty coffee?

In specialty coffee, different roasts are designed to highlight the unique characteristics of each coffee rather than applying a one-size-fits-all approach. Microlots are typically roasted lighter to suit filter brewing, while espresso roasts are often closer to a medium roast to enhance balance and sweetness. Each coffee has its own unique profile, so we develop a specific roasting “heat recipe” for every lot, testing and cupping up to 25 different versions to find the ideal degree of roast using our own specialist profiling and roasting calculations.
